This class has become a Laurel Run classic, and for good reason. Taught to well over 600 students over the years – and now part of our new Cooking Fundamentals class series – Simple Sautés, Sauces & Sides is a must for all busy cooks wanting to serve delicious food from scratch in a short amount of time. Armed with a Laurel Run Sauce Chart (which is interchangeable for many proteins and side dish ideas) turn out a gourmet meal in 30 minutes. In this demo class, learn how to properly quick-sauté thin cuts of meat and finish them with a simple pan sauce, including Chicken Cutlets with Orange-Rosemary Sauce and a Whole-Grain Mustard Cream Sauce; Pork Medallions with Port & Cherry Sauce; and Shrimp with Lemon-Caper Sauce. We will also make three versatile side dishes – rice pilaf, spaetzle and creamy potatoes – as well as cover food prep and mise en place, stocking your pantry, kitchen organization and cooking techniques for meat. After this class, you’ll be turning out flavorful meals like a pro. Guests are welcome to bring their own beverages, including wine and beer.
