Join us for our annual Elegant Holiday Dinner at Laurel Run, one of our most popular classes now in its 21st year and taught to well over 700 students! When it comes to entertaining, it’s important to have a solid menu under your belt for special occasions (especially during the holidays) – and this one is it! We’ll cover essential cooking techniques and tips to create an elegant menu consisting of the Greenbrier’s Five Onion Soup with Shallot Garnish; Salad with Pears, Brie & Raspberry Vinaigrette; Roast Beef Tenderloin with a Port-Rosemary Sauce; Potato-Parsnip Purée; Lemony Green Beans; and a Cranberry-Rosemary Garnish. No holiday meal is complete without dessert: luscious, silken Crème Brûlée rounds out the evening. Techniques include meat cookery (roasting, resting, and the science behind carry-over cooking); sauce-making, and tempering eggs. Guests are welcome to bring wine to enjoy with this class.
