As we say farewell to the final days of summer, we can’t help but eagerly anticipate the arrival of fall – the vibrant changing leaves, crisp evening air, and familiar aromas of cinnamon, apple, and woodsmoke. And on September 17th, just ahead of the fall equinox, the full Harvest Moon shines bright in the nighttime sky. With that, we embrace the forthcoming flavors of the season, learning to make Mulled Hot Cider with Warming Spices; Creamy Pumpkin Bisque; a fall salad of Roasted Acorn Squash Agrodolce with Smoked Almonds & Crispy Sage; Mustardy Cider-Braised Pork with Apples & Shallot; and finally a Pear Galette with Browned Butter Maple Drizzle. Techniques include roasting, braising, baking, and more. Guests are welcome to bring wine and beer to enjoy during this demonstration-style class.
